Chicken Fajitas
I first got the idea of creating my own recipe after a restaurant experience that left me a little frustrated. I ordered chicken fajitas but when the dish arrived, the chicken was cut into pieces smaller than a penny and completely buried under a mountain of bell peppers and onions. I could barely find any chicken! That’s when I decided to make my own at home. Decent sized chicken pieces, just the right amount of veggies, and plenty of flavor. Honestly, a lot of my cooking comes from that mindset: “I can do better than this.”

Ingredients:
2 Lbs Chicken Breast
1 Red Bell Pepper
1 Green Bell Pepper
½ Onion
4 Tbsp Olive oil
2 Tsp Chili Powder
2 Tsp Onion Powder
1 Tsp Ground Cumin
1 Tsp Smoked Paprika
1 Tsp Black Pepper
1 Tsp Salt
4 Garlic Cloves
1 Lime
Bunch of Cilantro
Steps:
Make the marinade: In a bowl combine the chili powder, onion powder, cumin, smoked paprika, black pepper, salt, minced garlic, chopped cilantro, 2 tbsp olive oil, and juice of 1 lime. Mix well and set aside.
Cut chicken into thin slices and place in a bowl. Add the marinade to the chicken making sure to coat the chicken fully. Set aside while we cut the veggies.
Slice the bell peppers and onions into thin strips and set aside.
Heat 2 Tbsp of olive oil on a large pan over medium high heat. Once warmed add the bell peppers and onions, cooking until they are softened, about 10 minutes.
Push the veggies to the side and add the marinated chicken. Cook until the chicken reaches 165F and is no longer pink. About 10-15 minutes. Stir occasionally to combine with the veggies.
You can top with extra cilantro or more lime juice if desired.
