Banana Bread Muffins
I’ve always loved banana bread, but I wanted something a little more convenient, something easy to grab and go. So I started testing out a few different versions and made small adjustments along the way until I landed on this one.
At first, I kept it simple and just added chocolate chips. One day I had an extra bag of walnuts sitting in my pantry so I decided to toss those in too. It turned out even better than expected! Now I always make them with both chocolate chips and walnuts together. The combination adds the perfect texture and flavor, and they’ve quickly become a favorite for everyone who tries them!

Ingredients:
3 ripe bananas
¾ cup sugar
½ tsp vanilla extract
1 egg
1/3 cup melted butter, room temp
1 tsp ground cinnamon
pinch salt
1 tsp baking soda
1 tsp baking powder
1 ½ cup all purpose flour
Optional Add-Ins:
½ cup chocolate chips
½ cup chopped walnuts
Steps:
Preheat oven to 365F and line a muffin tin with cupcake liners. Only fill every other muffin cup with a liner. This gives muffins room to rise so they don’t touch and stick together while baking.
In a large bowl peel and mash bananas until smooth.
Add sugar, vanilla extract, egg, and melted butter. Mix until well combined.
Then add salt, baking soda, baking powder, cinnamon, and flour. Stir until just combined, do not overmix.
Optional: fold in chocolate chips and/or walnuts.
Pour into cupcake liners, filling each one almost to the top.
Bake 18 minutes or until a toothpick inserted in the center comes out clean.
Let cool before serving and enjoy!
